Unox launches the Bakertop Retail baking station

Exclusive preview at HostMilano 2025 of the new solution with two stacked chambers, capable of baking up to 18 trays with maximum evenness.

Innovation, research and industrial vision: these are the pillars with which Unox arrives at HostMilano 2025, bringing a world premiere: BAKERTOP RETAIL, the new compact and intelligent baking station designed for the bakery corners of supermarkets and retail outlets.

Unox, a leading company in the design, production and sale of professional ovens for the foodservice, large-scale retail, pastry and bakery sectors, announces the launch of the new BAKERTOP RETAIL, a professional baking station with two stacked chambers specifically designed for the bakery corners of large and medium-sized stores. It is a solution designed to maximize productivity, baking evenness and the standardization of bakery processes, combining ergonomics, automation and artisan quality, all in less than 1 m² of space.

Cutting-edge technology born from Unox's expertise in designing intelligent combi ovens for bakeries and pastry shops, a sector in which the company is recognized as one of the world's leading players.

After two years of research, testing and co-design with the main European supermarket chains, this new baking station was created to meet the current challenges of the retail world: increasing productivity, maintaining consistent quality over time, reducing operational complexity and optimizing available space.

?BAKERTOP RETAIL is the result of collaborative work between our R&D department and our partners in the retail sector, born from the need to combine professional performance with ease of use,? says Nicola Michelon, CEO of Unox. ?With this project, we want to offer a solution capable of guaranteeing consistent quality, operator safety and space optimization, which are fundamental elements for the retail sector.?

BAKERTOP RETAIL consists of two stacked baking chambers that make it possible to bake up to 18 trays simultaneously with maximum evenness. It is currently the only baking station for bakery corners on the market able to hold more than 17 trays.

Designed specifically for retail production, it is equipped with the QUICK.Load trolley: an ergonomic trolley custom-designed to meet the needs of the sector and ensure operator safety, allowing fast and smooth loading and unloading of trays, thus reducing time, effort and risks.

Among Unox's flagship technologies, BAKERTOP RETAIL integrates: AIR.Maxi™, DRY.Maxi™ and STEAM.Boost for optimal airflow distribution and top-level humidity management, and ADAPTIVE.Cooking™, SMART.Preheating and CLIMALUX™, which automatically adjust temperature, time and humidity parameters for preheating and baking to guarantee consistently excellent, repeatable results. It also features the SENSE.Klean™ automatic washing system, optimizing cleaning and extending the life of the investment. Finally, working like a combi oven, its ability to intelligently manage the humidity level in the chamber reduces baking times by up to 20% compared with traditional convection ovens.

BAKERTOP RETAIL will be available in two models: the 18-tray version, consisting of a 12-tray baking chamber and a 6-tray one, and a 12-tray version with two 6-tray baking chambers.

The launch of BAKERTOP RETAIL is part of the continuous innovation path that has characterized Unox's industrial strategy for years.

The company has recently completed Unox City, a next-generation production and technology hub that brings together research and development, production, logistics and training in a single location.

The goal is to create a fully integrated innovation chain, where direct collaboration between designers, engineers and operators makes it possible to shorten development times and constantly improve product quality.

Within Unox City is the Innovation Hub, the center where engineers, technologists and specialists work every day on developing solutions for cooking, automation and industrial digitalization.

In this environment, collaboration between research and production is continuous: new ideas can be immediately tested, adapted and brought to market. It is from this ecosystem that the innovations Unox regularly introduces to the foodservice and bakery sectors are born, such as BAKERTOP RETAIL, designed to concretely meet the needs of the retail sector.
