The Light of an Ancient Terroir Serving Gastronomic Networks

The Light of an Ancient Terroir Serving Gastronomic Networks

The light of an ancient terroir serving demanding gastronomic networks

At dawn, when the light strikes the olive groves of Byzacena, the air is dry, mineral, almost silent. The trees, spaced twenty-four meters apart, cast their long shadows on ochre earth worked by hand for generations. Here, the olive tree is not cultivated to produce more. It is cultivated to endure.

It is in this landscape that Terra Byzacena takes root.

Some oils are born of a yield. Others are born of a territory.
In south-western Tunisia, Byzacena remains one of the historic cradles of Mediterranean olive growing. Mineral soils, intense light, desert winds and temperature swings have shaped, for centuries, a landscape of widely spaced olive trees, grown on a human scale.

It is in this context that Terra Byzacena is developing a deliberately heritage-driven model, based on the indigenous Chemlali variety, an entirely manual harvest and cold extraction.

In 2026, the house is starting its rollout in France with a clear strategy: to address demanding networks – gastronomy, hospitality, fine food shops and high-end selective distribution – before any broader expansion.

A structured, low-density agricultural model
330 hectares of olive groves.

The trees are planted 24 meters apart.

Farming is non-intensive.

The harvest is 100% manual.

The Mediterranean climate with high annual sunshine, the moderate water stress of a semi-arid environment and the mineral richness of the soil promote a natural concentration of aromatic compounds.

The indigenous Chemlali variety, grown here for centuries, is harvested exclusively by hand. Extraction is carried out cold in order to preserve the aromatic integrity of the fruit.

This non-intensive model, based on family transmission and control of volumes, shapes the identity of the house.

Two complementary expressions of the same terroir, the precision of an early harvest
Variety: Chemlali

Early, manual harvest

Cold extraction

Annual production: approximately 30 tonnes

Coming from a specific plot selection, Aurora relies on a deliberately limited harvest in order to preserve aromatic concentration and phenolic richness.

Profile: green fruitiness, vegetal freshness, notes of green almond, controlled pungency, lovely length.

Positioned for demanding gastronomy and premium networks seeking rarity and an aromatic signature.

The controlled balance of a quality everyday oil
Variety: Chemlali

Harvest at maturity, manual

Cold extraction

Annual capacity: approximately 250 tonnes

Essentia draws on a structured network of producer families from the same region, ensuring stability and consistent quality.

Profile: ripe fruitiness, roundness, almond and slightly buttery notes.

Designed for demanding everyday gastronomy and for selective retail shelves seeking an authentic, structured and accessible oil.

An establishment built on quality, not volume

Terra Byzacena is launching its commercial structuring in France with a measured ambition:

establishment in quality-focused CHR (hotels, restaurants and cafés),

listing in targeted fine food shops,

presence within premium distribution networks and gourmet department stores,

development via wholesalers specialized in foodservice,

building a network of prescribing chefs.

Mass-market retail is not a priority at this stage.

The house favors a gradual establishment within environments consistent with its agricultural model and its positioning.

Controlled growth
Aurora and Essentia are part of a sustainable, non-intensive development approach.

The international ambition will follow the same line: specialized gastronomic networks and high-end distribution, without distorting the agricultural model.

?Our ambition in France is simple: to enter houses that share this demanding standard – kitchens, fine food shops and venues where a product is chosen as much for the story it tells as for what it brings.? La Maison Terra Byzacena
