ECHR designs the new kitchens of Stars'N'Bars in Monaco

Damien HAIRABETIAN, co-manager of ECHR, led the complete refurbishment of the kitchens and bars of the famous STARS'N'BARS, at the request of Kate Powers and Didier Rubiolo, owners of this legendary Monaco venue, home to numerous ?memorabilia? from stars and great sportspeople.
This exemplary project adds to the track record of prestigious achievements of ECHR, a leader in the design and construction of exceptional professional kitchens.

What are the features of this project?

It took 12 months of studies to set up this project, in collaboration with the architect Fred Genin, Agence ARCH-Monaco, and 4 months of works to design all the food service areas, bars and pantries of this establishment across 3 levels, and to create a kitchen with a capacity of 1000 covers per day that is ergonomic, designed with sustainable development in mind, and fits the aesthetic approach of the restaurant's new decor.

The kitchen works represented a real technical challenge, given the constraints of the building (a former disused factory with a complicated structural layout), whether for the installation of all the refrigeration networks or the integration of serving and catering equipment on every floor, along with a ?forward flow? (marche en avant) specifically adapted to the client's catering needs.

Everything was rethought in line with the architectural layout and the wishes of the Stars' n' Bars team. All the elements were custom-made in stainless steel, in a ?factory? style setting, consistent with the restaurant's dining rooms. The high-tech cooking equipment, fully electric, with low heat radiation and highly versatile, made it possible to reduce extraction rates and improve the working conditions of the kitchen brigade.

The main bar, the true soul of the establishment, was entirely redesigned in terms of its ergonomics, to take into account the high service throughput.

In all, 10 people from ECHR devoted themselves to this project.

The STARS'N'BARS kitchens by ECHR are once again proof of the skill of a team that listens to the needs of its clients, is innovative and at the forefront of the latest energy-saving, extremely hygienic cooking techniques, which fit perfectly into the current sustainable development movement.
