For more information on private cooking demonstrations with the Four Seasons Culinary team, visit: https://www.fourseasons.com/orlando/dining/restaurants/demonstration-kitchen/ RECIPE - Gnocchi with Fresh Tomato Sauce (serves 6) INGREDIENTS Gnocchi -750 grams of potatoes -250 grams of all purpose flour -100 grams of semolina flour -1 egg -20 grams of salt -10 grams of ground white pepper -5 grams of nutmeg Fresh Tomato Sauce -1 kilogram of heirloom tomatoes (seedless and diced) -100 grams of peeled garlic (minced) -100 grams of chopped shallots (minced) -100 grams of Extra-virgin olive oil -30 grams of sea salt -10 grams ground black pepper -100 grams fresh basil leaves (cut into julienne) -200 grams shaved Ricotta Salata cheese DIRECTIONS Gnocchi -Boil potatoes in salted water with the skin on. Once the potatoes are cooked, peel and pass through the food mill. Set aside in a stainless steel bowl until warm. -Add flour to the potatoes. -In a separate bowl, mix the egg, salt, white pepper, and nutmeg. -Add the egg mix to the potatoes and flour, and mix everything together until the dough is a fluffy texture (do not overwork). -Roll the gnocchi dough into ropes, and cut into individual gnocchi pieces. Set aside in a pan with semolina flour. -Boil the gnocchi in salted water until they start floating (apx. 30 seconds) then remove and drain the gnocchi. Set aside. Fresh Tomato Sauce -Sautée the minced garlic and shallots in Extra-virgin olive oil until slightly golden. -Add diced tomatoes and sautée until soft. Season with salt and pepper to taste. -Add the cooked gnocchi and toss with the tomato sauce. -Add the julienned basil and toss once more. -Serve the mixture in a pasta bowl, and garnish with Ricotta Salata and basil leaves.
