The annual cassis harvest has just finished in Anjou and our Noir de Bourgogne blackcurrants are already macerating. Once again, Edith Giffard has been overseeing the harvest and making sure of the fruit's quality before it is rapidly sent to Julien Mesange for maceration. It is vital that the time between picking and maceration is kept to an absolute minimum so that all of the rich flavour is captured.
